Freezer Clean Out: Bananas!

Remember my post a few days ago about being gluten-free?  This post is the opposite!

I had a slew of frozen bananas in the freezer that kept falling out and knocking us on the head when we opened the freezer:


That was a lot of bananas. You can see the cream cheese. That's been in the freezer for a while, and I wanted to use that us as well. 

So Sunday became baking day. I found two great recipes- one with oil instead of butter (I didn't have enough for two batches of bread). And the using the cream cheese:


 
Now, baking banana bread isn't really that big of a deal, but my challenge was to find recipes that would help me use what I had, and not have to go buy more butter or more of anything else.  I wanted to eat bake out of the freezer only.

In the end I had three loaves of bread and a dozen muffins. The best part?  The kids don't realize that there is cream cheese in the bread {they don't usually care for it at. all.}


Even with all this bread, I still have 1 cups of banana puree that I put back in the freezer.  And look what I found when I put the jars in the freezer:
